Gingerbread Cake
2 cups sifted cake flour
2 tsp. Baking powder
1/4 tsp. soda
2 tsp. ginger
1 tsp cinnamon
1/2 tsp. salt
1/3 cup Crisco
1/2 cup sugar
1 egg, well beaten
2/3 cup molasses
3/4 cup sour milk or buttermilk

Preheat oven to 350.
1.  Sift flour, once, then measure it.  Add baking powder, soda, spices and salt to it.  Sift 3 more times.
2.  Cream Crisco thoroughly, add sugar gradually and cream together until light and fluffy.
3.  Add egg and molasses; then flour, alternately with milk.  Beat after each addition until smooth.
4.  Pour into a greased pan or a ring mold.
5.  Bake at 350* for 1 hour 15 minutes. 

Serve with whipped cream.
May be used as a base for fruit shortcakes.
