Crockpot Lasagne
1 1/2 pounds Italian sausage, any meat flavor (beef,turkey,pork)
2 medium onions, chopped
1 large jar spaghetti sauce
2 tsp. Italian seasoning mix
1/2 tsp. oregano
1/4 tsp. thyme
1 Tbsp. minced onion
15 oz. container Ricotta Cheese
1 cup shredded parmesan cheese
3 cups shredded mozzarella cheese, 1/2 cup kept on side in a small bowl for topping
12 uncooked lasagne noodles

1.  Spray your crockpot with cooking spray.
2.  In a large skillet, cook the sausage and onion over medium heat until the meat is no longer pink.  Drain.
3.  Add the sauce and all the seasonings to the meat.  Reduce to low and simmer for a few minutes until flavors blend.
4.  In a bowl, combine the three cheeses.
5.  Spoon 1/4 of the meat mixture into the bottom of the crockpot.
6.  Top the meat mixture with the lasagne noodles, broken to fit.
7.  Spoon 1/3 of the cheese over the noodles, with another 1/4 of the meat mixture.
8.  Create another noodle, cheese, meat layer with more noodles on top of the meat. 
9.  Add the final 1/4 of the meat mixture on top of the last noodle layer.
10.  Cover and cook on low for 6 - 8 hours or on high for 3 - 4 hours.
11.  Sprinkle the mozzarella cheese you set aside over the top, cover and cook another 15 minutes, until cheese is melted.
