3 large ripe bananas
1 C. sugar
1 egg
4 T. margarine, melted and cooled
1 ½ cups flour
1 t. salt
1 t. baking soda
1. Preheat oven to 325. Lightly grease a 9x5 loaf pan. Set aside.
2. In a bowl, mash bananas (about 1 C.). Beat in the sugar, then egg and butter.
3. In another bowl, stir together flour, salt and baking soda. Add to the banana mixture and stir just enough to moisten the batter.
4. Pour batter into the pan.
5. Bake for 55 to 60 minutes.
Makes 1 loaf.
